When substituting yarn, this pattern is very forgiving and works with pretty much any yarn that will knit to a standard DK/8ply tension. A wool-based yarn is recommended to provide some elasticity and memory through the yoke section. You may wish to substitute the cable stitch pattern in the larger sizes to replicate the aesthetic of the smaller size.
